Baobab (Mabuyu) Juice

Baobab (Mabuyu) Juice

Baobab (bay-oh-bab) a very healthy fruit found in almost all countries of Africa, is just starting to gain popularity in the western world. The white part of the seed can be used as an ingredient in different kind of recipes that ask for tamarind or lime, in Tanzania, baobab is mainly used to make juice or eaten as candy if coated with sugar and color. Sometimes it is hard to differentiate baobab juice from tamarind Juice.

If you are using baobab powder (can be purchased in the internet), mix 2 tbsp of baobab powder with 1 ½ cups of water. Or follow package instructions.

Ingredients

  • 5 cups      Baobab seeds (Mabuyu)
  • 10 cups      water
  • 1 cup      Sugar
  • 3 cups      Extra water
  • Color(optional)

Preparations

  1. In a large pot, mix baobab seeds and 10 cups of water. Boil for 30 minutes or until the white part of the seed dissolve completely in boiling water. Then put aside to cool a little bit.
  2. Separate the seeds and water by using a strainer.
  3. Add 3-4 cups of water to baobab juice.
  4. Add sugar.
  5. Add color (optional).
  6. Put in the fridge to cool or you can drink it hot as tea. (If you would like to drink while hot, do not add color).

    I want to start producing Baobab juice. I tried one time but it wouldn’t take long before it gets bad for consumption, if packed in plastic bottles, the bottle would inflate and burst. I would therefore like to have an advice on how I can improve my product to take at least 3 months or longer before it gets bad after making it. Please help.

      I am looking for alot of baobab dried fruit (pulp + seed).

      When you boil mabuyu to make juice the nutrients get destroyed. It is better to mix with water or add to juice and you will get nutritious mabuyu juice.

          never boil or mix Mabuyu

          just mix the powder of it with cool water add suger its done.

          here in Tz we even eat it without mixing with water. we just eat, i had flu one day it cured me.

          its very usefull.

      I remember in Zanzibar as kids in the 50s, we used to buy salted roasted baobab seeds. So I think you may try doing that the way we do karanga (peanuts)
