This masala is mainly for pilau, but it can be used in many other dishes like samusa, Nyama choma (bbq) etc.
Ingredients
- 1½ tbsp Cumin
- 1 tbsp Cardamon
- ½ tsp Black pepper
- ½ tsp Cinnamon
- ½ tsp Cloves
Preparations
- Mix all the spices well. Add a portion of the mixture (to taste) to the rice or according to recipe, then store the unused in a dry place.

If you have sprouts store in your area then you will get cardamom. But I would buy the seeds without the shell, then I would grind using a coffee grinder. Buying cardamom powder is a very bad idea, it never taste like cardamom

Thanks for posting this. However, I’d like to know pilau masala recalls ground spices. I’ve never seen ground cardamon or ground cloves.
I’m from Burundi so I’m not really familiar with this but i’d like to try to cook pilau.
