Not your regular donut!

Maandazi

Maandazi

Maandazi (East African donuts) are a special treat. The taste of maandazi is very different from western donuts. First, one can never get tired of eating maandazi. Second, they are more like bread inside. Third, maandazi are not as oily as western donuts.

To prepare, please start one hour and a half to prepare before time to eat. The dough is very similar in consistence to regular bread dough.

Ingredients

  • 2¼ tsp dry yeast
  • ½ cup warm water
  • 1 tsp sugar
  • 1 tsp ground Cardamon
  • 3 cups all purpose flour
  • 2-4 tbsp extra sugar
  • ¾ cups coconut milk
  • 1 tbsp oil (optional)
  • oil for deep frying

Preparations

  1. Dissolve 1 tsp sugar in ½ cup warm water. Then, dissolve yeast in the same mixture. Cover with a plastic wrap until the yeast rises.
  2. Add into mixture the remaining sugar, oil, cardamon and ½ cup of coconut milk.
  3. In a bowl, mix flour into yeast mixture. If the dough is too hard to handle, add the remaining coconut milk, about a tbsp at a time.
  4. If it is too soft, add flour a little bit at a time.
  5. On a flat floured surface, continue to knead the dough for 10 minutes until it becomes elastic. Move the dough to a clean lightly oiled bowl, cover with a clean cloth and let it rise.
  6. Once it has doudled in size, knead the dough for an additional 2 minutes.
  7. With a rolling pin, roll the dough to about 1/2 cm thin. Use a round cookie cutter or a similar utensil to cut the dough into regular shapes.
  8. Deep fry in vegetable oil until golden brown.

Serve at room temperature or warm in microwave for 10 seconds.

I love the taste of the maandazi’s I made today but, why do mine have a huge empty space in them? What am I doing wrong, they are just full of air…..Please help.. :)

    Thank you.

    • Miriam Rose Kinunda on June 8, 2012 at 11:20 am

Make sure you are using measuring cups and spoons for ingredients. Do not make the shapes too thin. Last, try to allow the shapes to rise before frying.

    • Sophie on June 26, 2012 at 1:14 am

I’m not sure that you are doing anything. I recently ate mandazi in Kenya (in various establishments!) and they all had a big air hole in the middle. They were like lovely soft, fragrant pillows.

asante sana at last nimepata matokeo mazuri , kama hautajali weka recip ya chapati kila nikitengeneza zinakuwa nguma kama ngozi

    • Miriam Rose Kinunda on September 17, 2010 at 10:14 am

Matatizo yetu siku hizi hatutaki kutumia mafuta mengi. Na chapati zinapenda mafuta.

    @ Kitoto,
“All purpose flour” ni unga wa ngano ambao unaeza kutumia kupikia keki, mikate, maandazi na chakula chochote kinachotumia unga wangano. Pole nita sahihisha ili ieleweke zaidi.

    Asante ka kugundua hili jambo

  28. Kitoto on April 15, 2010 at 2:19 pm

    Miriam,
Huo unga wa kupikia Maandazi ni wa ngano? Maana umeandika “all purpose flour”…nimesikia wasomaji wengi wasiojua kupika maandazi wakiuliza. Hebu fafanua zaidi maana iko kidogo “ambiguous”…

  • Is there any difference between mahamri and mandazi? May 10, 2013
As I am reading my old notes here, I came across something that I wrote a few years ago but I forgot to post it here. Before I post this topic, I would like to hear what my readers have to say. When I used to live in Nairobi Kenya in my teenage years, I noticed that almost every Kenyan I knew did not know what mandazi were, but they did know mahamri. I used […]
