Kachumbali

KachumbariThis is the one salad most Tanzanian kids know and love.Traditionally, raw cabbage is used for this dish. However, I prefer to first slightly fry the cabbage in a little extra virgin olive oil before using it in the salad. I have also add extra virgin olive oil.
This is a side dish.
Ingredients
NB. The amount of cut tomatoes and cabbage should be equal while the amount of onions should be about 1/2 or 1/3 of tomatoes.

  • Tomatoes (Cut tomatoes in about 1/2 a centimeter thin slices)
  • Cabbage (Cut cabbage in very thin strips of about 4 to 6
    centimeters long)
  • Red Onons (Cut red onions in very thin slices)
  • Fresh lemon/lime juice
  • Coriander/cilantro
  • Hot peppers
  • Extra virgin olive oil
  • Salt

Mix all the ingredients in a bowl. Add salt, lemon juice, olive oil and coriander to your taste.

  2. this is really tamu. not for kids pekeyao. you might mistake it for main dish instead of side dish. i sometimes eat it yenyewe.but i prefer it with more onions and small amount of kabechi. ha! ha! ha!
